The window for successful harvesting of the fruit is very narrow, the acid/sweetness balance and maturity of the tannins being so crucial to this type of wine. The vinification process is traditional but we do not use SO2. Destemming, maceration for around 10 days, soft pumping-over, pressing. After fermentation, the wines are racked again.

Floral, beautiful aromas of red berries, crisp cherry, and garrigue. Purity and fruitiness prevail in this wine.

This wine will be organic from the next harvest, 2021.
